What is a "cold-smoked" bone?
Cold-smoking is done to give a rich hickory smoked flavor but it does not cook the bone. This bone is cold-smoked at 86 degrees for up to 72 hours giving the bone an irresistible scent. Most are familiar with heat smoking which imparts both flavor, scent, and cooks meat. However, our bones are not cooked. We cold-smoke these bones as it prevents splintering and preserves a rich, nutritious marrow inside. Since this is a fresh product, we recommend storing in an open paper bag instead of a sealed baggie or container.
